Specifying Capsicums

Color is measured in extractable color units. Heat is measured by high performance liquid chromatography and reported in Scoville heat units. Both decline with age, light and heat, so we store capsicums cool and dark, rotate strictly by lot and retest before shipment when stock has aged. If you need a specific color or heat held across a season, we will manage blends of lots to deliver it.

Dye and Adulterant Screening

Every capsicum lot is tested for Sudan dyes and related illegal colorants at an accredited laboratory before release. Our automated inspection system also compares the color spectrum of each lot against the expected profile for its origin and grade and flags anomalies for additional testing. See Testing and Analysis.
