Rehydration and Application
Dehydrated vegetables are specified by moisture, piece size and rehydration ratio. Our research and development kitchen tests rehydration in the customer's actual application, whether that is a dry soup mix, a retorted sauce or a snack seasoning, and recommends the form that performs best. See Research and Development.
Sulfite Status
Many dehydrated vegetables are traditionally treated with sulfites to preserve color. We stock sulfite-free versions of the high-volume items and declare sulfite status on every specification sheet, with test results on request.
